best macaroni and cheese
Ingredients
2 c. (8 ounces) elbow macaroni
1 stick Butter
1/4 cup Minced onions
3 tbsp. Flour
2 c. Milk or light cream
1/2 c. Dry white wine (or water)
2 c. Grated sharp cheddar (1/2 pound)
1/2 cup Bread crumbs (topping)
Salt and freshly ground pepper
Cayenne to taste 1/2 tsp. paprika
Preparation
Bring 4 qt. salted water to a rapid boil and cook the macaroni until not quite tender. Drain macaroni and set aside.
In saute pan, melt 1/2 the stick of butter (or 4 tablespoons). When melted, stir in the breadcrumbs and toast just until lightly browned. Remove breadcrumbs from pan and set aside. Wipe pan clean with paper towel and re-use for next step. Breadcrumb topping: Melt remaining butter, add onions, and stir over low heat until onions are just translucent, but not browned. Stir in the flour and seasonings. Continue to cook for an additional 2-3 minutes. Add the wine, then gradually stir in the milk or cream.
Simmer over low heat, stirring constantly until the sauce is thickened and smooth. Add cheese and continue stirring until the cheese melts.
Combine the macaroni with the cheese sauce. Turn out into a generously buttered casserole dish (approximately 1 1/2 quarts). If you have any extra grated cheese, you can sprinkle this on top along with the 1/2 cup of buttered, toasted bread crumbs.
Bake in a preheated 350 degree Fahrenheit oven for approximately 20 minutes or until heated all the way through and golden brown on top.

1 1/2 cup of elbow macaroni
1 cup buttermilk
2 packs (8oz) shreaded cheddar cheese
Flour
1/2 stick of butter
Yellow Mustard
Black Pepper
Cook the macaroni, drain & rinse
While the macaroni is cooking, add the butter to a saucepan & let it melt, stir in a little flour; the mixture should be thick but not lumpy.
Next add 1-2 tspn of mustard, mix well.
Add the buttermilk & stir til mixture is smooth, then add in the cheese (save a little for the top of the macaroni)
Once the cheese has all melted turn the flame off.
Add a few slices of butter to the bottom of the baking dish, then add the macaroni.
Next mix in the chesse sauce.
Add some pepper to taste & top it with more cheese.
Bake @ 350 degrees for about 30-45 minutes.

Cook 1.5 cups of macaroni, pre-heat oven to 400 degrees. Pour half of the macaroni in a cooking dish and cover with 1/2 lb. of sharp cheddar cheese. Pour the remaining mac. in and pour another 1/2 lb. of sharp cheddar on top of that. Take some milk and pour in the middle until you just start to see it coming thru the mac & cheese. and cook for about 45 minutes, covered. Take off the cover and place back in oven for about 10 - 15 minutes to make the top crisp. Serve with Italian susage or meat loaf.

Mac and cheese is the American-Italian version of pasta.No the real recipe o real Italian,but many people believe that dish is good.The cheese in many cases is Velveeta ( no real one) and the taste is awful.You can make some good one if you use another cheese.Mozzarella,muster,cheddar,Swiss or provolone.However,keep in mind these chease aren't good in the microwave oven.

I package elbow macaroni (boiled and strained)
Velvetta cheese cubed and mixed with noodles.
I had 1/2 cup of milk
1 table spoon of sour cream (secret ingredient)
sprinkle with crushed wavy potatoe chips.
bake at 350 until it browns on top.
Chees will be melted.
