I found a recipe for zucchini pie - sweet like apple pie, not savory like the one above.
4 c zucchini, peeled, seeded, sliced
-boil until tender. drain. put into cold water for 5 minutes and drain.
1 c sugar
2 Tbls flour
1 tsp cinnamon
1 1/2 Tbls cream of tartar
2 Tbls lemon juice
1/2 tsp salt
1/4 tsp nutmeg
1 Tbls butter
Mix all except butter and add zucchini. Mix and pour into deep dish pie crust. Dot with butter. Cover with top crust. Bake 40-50 minutes at 400 degrees.

I also have an amazing chocolate zucchini cake recipe. It is quite lengthy but well worth the effort.

Batter:
Cream 1/2 c butter, 1/2 c oil, and 1 3/4 c sugar.
Add 2 eggs and 1/2 c sour milk, beat well.
Mix in 2 c grated zucchini.
Mix together: 2 1/2 c flour, 1/4 c cocoa, 1 tsp baking soda, 1 tsp salt. Add to above.
Mix in 1 tsp good vanilla.
Filling:
8 oz cream cheese, softened
2 Tbls margerine
1/4 c sugar
1 Tbls cornstarch
1 egg
2 Tbls milk
1/2 tsp vanilla
Mix all well.
Now, spread 1/2 of batter into greased/floured 9x13 pan. Spread filling over top and then cover with remaining batter. Is tricky but can be done with a little patience.
Bake about 1 hour at 325 degrees.
Frosting:
1 c sugar
1/3 c milk
1/4 c butter
Boil 1 minute and add 1 c choc. chips. Melt most of way, remove from heat and beat with electric mixer until smooth and velvety - should pour from pan and spread easily onto cooled cake.
Absolutely wonderful!

My favorite is just a zucchini saute. You can do any variation of it, but usually I just pain fry sliced zucchini in either butter or olive oil if I'm trying to be healthy. (Also try Italian dressing for a different flavor.) You might thorw in a couple spices, maybe some garlic or a little italian seasoning. I think my mom might use rosemary or thyme. Once the zucchini is cooked to the state I desire I just throw in some chopped roma or cherry tomatoes. Finally grate any combination of white cheese on top of the mixture. I like mozzarella and parmesan, or some provolone if I have it. Then cover the entire pan until the cheese has melted and enjoy! Easy clean up too since you only got one pan dirty and maybe a knife or cheese grater! Gotta love that!

STUFFED ZUCCHINI - Cut large size zucchini in half lengthwise, scoop out the seeds and stuff hollowed out zucchini with a mix of cooked rice, browned ground beef or lamb seasoned with oregano, rosemary, dash of cumin and a little pepper, crumbled feta cheese and top with buttered bread crumbs. Bake in a greased baking dish for about 20 to 25 minutes at 325 fahrenheit until crumb topping is brown and squash is done but not OVERDONE! I hate mushy. This can be served as a main dish with a salad on the side. I recommend a nice rose wine or zinfandel. My guests have raved about this dish. P.S. I created this dish one summer when I grew zucchini the size of my forearm.

I make an awesome zucchini pie recipe thats so easy and everyone loves!!!!!!!!! Try it i guarantee you'll love it. I always make two because ones never enough for my hunny.

BISQUICK ZUCCHINI PIE

3 c. grated, unpeeled zucchini
1 lg. onion, chopped
1/2 c. grated Parmesan cheese
1/2 c. grated cheddar cheese
1/2 c. salad oil
1 c. Bisquick
4 eggs, beaten
1/2 to 1 tsp. parsley
Dash of salt and pepper

Grease 9-inch pie plate or 9 x 9 square pan. Combine all ingredients.
Bake at 350 degrees for 35-40 minutes or until lightly browned.

I love fried zucchini. I cut it up into little slices, then I dip it into egg, then dip it into flour(seasoned with salt, pepper, and whatever else tastes good), then I fry it in the frying pan. This is not a low fat way to do it.

A more low fat way would be to bake it in the oven or boil it.. Or make a soup or stew out of it. You could also mix zucchini with your favourite meat and maybe make a stir fry with it.

Any zucchini is GOOD zucchini! I love this stuff!! YUM.

I love grilled zucchini. You can use an outdoor grill or one of those indoor grills (even a George Foreman grill). Just slice the zucchine lengthwise and spray with a little PAM if you're worried about it sticking to the grill. Then just watch it and when you have some nice brown grill marks, the zucchini is done. Yum...I just figured out what to have for dinner tonight...thanks.

Khoresht Kadoo (Zucchini & Lamb)
Ingredients: (4 servings)

Lamb or beef, 400 grams

Small Zucchini, 8

Medium onions, 3

Tomato paste, 2 spoons

Fresh lime juice, 2 spoons

Cooking oil

Salt

Directions:
Peel onions and slice thinly. Fry in oil until slightly golden. Cut meat into small pieces and fry with onions until color changes. Bring 2-3 glasses of water to a boil, and add to meat. Add salt and pepper, and cook over medium heat for about one hour. When meat is cooked, there should be about one glass of water left. Add tomato paste and lime juice, and mix well.

slice Zucchini length-wise to a thickness of 1 cm. Add salt on both sides and fry in abundant oil on both sides over medium/low heat until golden. Place Zucchinis over meat (but do not mix with meat). Place the lid on and cook over low heat for another 10 minutes.

I've been known to grate zucchini's and add them to stews, soups, and casseroles. My kids have never figured it out. They are 4, 5, and 11 years old. Since Zucchini kind of takes on the flavor of what ever its in, it makes it easy to add to stuff.

I call these fried tounges and my boys really like them

I peel the zucchini and slice long ways then I dip in beaten egg then in a mixture 1 part flour, 1 part cornmeal, salted and pepperd.Once coated I fry in a pan of oil.
