You know the ones that are made by the Tostitoes company and Pace.
I want to know the ingredients and the procedure.
Or just the ingredients cause you just have to mix it up.
Right?

I thought this was pretty good until I brought it to a family gathering and my brother and sister stood over it and ate it all, they thought it was great. I'm asked to bring it to all family gatherings. My brother grows the most beautiful organic tomatoes, so I use his whenever I can. During the winter I use canned petite diced tomatoes. I leave the skin on my tomatoes and keep the seeds in. I hand chop everything.

4 servings 1 batch
20 min 20 min prep
2 1/4-2 1/2 cups coarsely chopped ripe tomatoes (about two large tomatoes)
3/4 cup chopped onions
1/2 lime, juice
1/3 cup coarsely chopped cilantro, stems removed
1/4 teaspoon garlic powder
1/4 teaspoon sugar
1 tablespoon chopped jalapenos, fresh or canned,to taste
1/2 teaspoon tamari or soy sauce
1/4-1/2 teaspoon cumin
1 (3 1/2 ounce) can chopped green chilies

Combine all ingredients and gently stir well.
Refrigerate to give flavors time to mix, I usually refrigerate for about an hour.
We eat with tortilla chips, but the possibilities are endless.

People tell me that my homemade salsa is good, but I don't use a lot of hot peppers because my digestive system won't take it. Substitute the kind of peppers you like to make it as hot as you want it. 6 medium tomatoes, peeled, seeded, and diced 1/2 c. fresh cilantro, chopped 1 red onion, diced 1 green pepper, seeded and diced 1 red pepper, seeded and diced 1 tablespoon lemon or lime juice 2 teaspoons sugar 1 teaspoon salt 1 clove garlic, minced Chopped hot peppers to taste (Habanero, Jalapeno, etc.) Place tomatoes in a collander and drain. Mix with remaining ingredients, and chill. Taste and readjust seasonings as necessary. Serve with corn chips or tortillas.

Easy Salsa: 1/2 small onion- quartered 2 jalapenos- sliced 1 garlic clove- crushed 1 bunch fresh cilantro- stems removed Juice of 1-2 limes 28 oz. can whole peeled tomatoes (you can use fresh tomatoes if you have them) Salt and pepper to taste Place your onion, jalapenos, garlic, cilantro, and juice of one lime in a blender or food processor. Process until ingredients are chopped. Add in your can of whole tomatoes, salt and pepper. Process until the consistency you like, chunky or smooth. Taste for seasonings and if you like it more acidic add more lime juice to taste. If you like it hotter then substitute the jalapenos for serranos or another chile that's hotter. You can also add in cumin or chipotles to change the flavors. Pour into a bowl and enjoy! You can of course adjust these ingredients to your taste. This is an easy version of salsa that is always a hit.

This is by far my favorite salsa recipe - make it the day before or a few hours in advance to serving it to make sure everything marinates.

Jeff Weber’s Cowboy Caviar*
6 - 8 servings

Ingredients

1 can black-eyed peas, drained and rinsed well
1 can shoe-peg corn, drained and rinsed (you can also use
fresh or other canned corn if you can’t find shoe-peg)
2 ripe avocados, cubed
2 fresh large tomatoes, seeded and cubed
1 bunch cilantro, minced
1 bunch green onion, minced

Combine above ingredients in a bowl. Whisk dressing and pour over. Blend and refrigerate for a while, preferably overnight. Serve with tortilla chips.

Dressing

¼ cup red wine vinegar
¼ cup olive or canola oil
1 teaspoon salt
1 teaspoon cumin
freshly ground pepper to taste

* I have no idea who Jeff Weber is nor why it’s called “caviar”; I always double this recipe and rarely have leftovers. Doritos Scoops work the best. Also use over chicken, fish, in omelet’s, etc. Enjoy!!!
