I dont know why we are attracted to certain flavours but we all are. Mint has been used for centuries as a herb to add flavour to Lamb (it brings out the meats more subtle tastes) and as a medicine for upset stomaches, which I think is why a lot of OTC remedies contain it. Why does it taste just as good in icecream or sweets, because we like its flavour, and we like sweet things!
We often use fruits and herbs for both sweet and savoury dishes.

Mint has a distinct flavor and tastes good if you like it, both in ice cream and as an compliment to meat, such as lamb.
