1/2 tablespoon shortening
1 1/2 pounds stew meat
1 onion, chopped
1 (14.5 ounce) can stewed tomatoes
2 - 3 potatoes, cut into wedges or cubes
2 fresh jalapeno peppers, seeded and diced
2 chopped tomatoes
1/2 teaspoon cumin
1 clove garlic, minced
salt and pepper to taste
water as needed
Melt the shortening in a large saucepan over medium high heat. Add the meat and brown well on all sides. Add the onions and saute for 5 minutes, or until tender. Add the canned tomatoes, potatoes, jalapeno peppers, fresh tomatoes, cumin, garlic, and salt and pepper to taste.
Reduce heat to low, cover and simmer for about an 1 hour, or until meat is tender. (Note: If mixture is too thick, add water as needed. Or if mixture is too thin, combine some cornstarch and water and add to thicken.)

* 1 (.18 ounce) packet sazon seasoning
* 1 tablespoon adobo seasoning
* 1/2 teaspoon dried oregano
* salt to taste
* 2 pounds beef stew meat
* 2 cups peeled, cubed potatoes
* 1 cup water
DIRECTIONS
1. In a large pot, combine tomato sauce, sofrito sauce, sazon seasoning, adobo seasoning, oregano, and salt. Simmer over medium low heat for 5 minutes. Add meat, and cook until evenly browned. Stir in just enough water to cover meat. Cover, and simmer for about 1 hour. Add potatoes, and cook for about 30 minutes or until potatoes are tender.
