it's on this occasion, that we make til vadi, and laddoos, if you are referring to it as gajak.
take good quality white, polished til, that is sesame seeds, about half k.g.
quarter k.g. ground nuts,
quarter k.g. gud, that is jaggery, but of the chikki variety, not the cake one.
ghee , one small bowl,
skinned chana dal, dry roasted, which is also used in chivda.
dry roast til, till they change color, but not burnt.
in a dekchi, put jaggery to melt, stir all the time,
dry roast ground nuts, remove the covers, and coarse grind them. you must do this, before melting the gud.
add til, nuts, dal, to the now melting gud, and stir.
let cool to the extent, you can roll the laddoos,
apply ghee on your palms, and roll small balls of the mixture.
alternatively, in a thali, pour the mixture, and cut cubes, but use the other type of gud, the cake type, by just crushing it, and flattening the mixture by using the rolling pin, if required.
while melting the chikki variety gud, take care not to over heat, and burn the syrup.
no need to add water, like with sugar.
if you want to use sugar, take one cup sugar, and water just enough to absorb the sugar while making a syrup, that would bind the laddoos.
gud is preferred. it binds very well.

TIL KE GAJAK

Ingredients:
1 cup sesame
3/4 cup jaggery
1/2 tsp cardamom powder
2 tbsp ghee

Method:

Roast sesame on low flame stirring continuously to avoid it from spluttering out of the pan.
Boil jaggery in 1/2 cup water to form thick syrup.
When done, check its consistency by putting a drop of the syrup in a dish of cold water. If the drop stays firm the consistency is right.
Add the roasted sesame to the syrup. On a rolling board, spread a film of oil and spread the sesame-jaggery mixture.
Flatten it to 1 cm thickness. When the mixture is sufficiently cooled, cut into square pieces. Store in an airtight container.

Til Gajak Recipe

Ingredients:
• 1 Cup sesame
• 2 tbsp Ghee
• 3/4 Cup jaggery
• 1/2 tsp Cardamom powder


Cooking Instructions:
• Heat a pan and roast sesame seeds on low heat.
• Keep stirring constantly to avoid it from spluttering.
• Prepare thick syrup of jaggery by boiling it with ? cup water.
• Strain this syrup.
• Take out the roasted sesame from the pan and add it to the syrup.
• Spread a thin layer of oil on a rolling board.
• Spread the sesame-jaggery mixture over oil film. Press it to 1 cm thickness.
• Cool the mixture sufficiently and cut into square pieces.
• Til Gajak is ready.
• Keep it in an airtight container.
