Extra virgin olive oil should not be used to cook with, only as an uncooked ingredient. Olive oil has a low heating point and once you have reached it then it looses flavour, using extra vigin to cook with is a complete waste of money. Use standard olive oil to cook in and save the extra virgin for dressings and vinaigrettes.

all olive oils are healthy enough, only if you cook a lot and want to save, you can use extra virgin for salads and virgin or cheaper kinds for frying

I use extra virgin only in dishes I'm not going to cook .the cheaper brands work great for frying but extra virgin can impart a strange flavor to the food if heated too hot. its awesome in marinades, salads or just to drizzle on top of food or even to sop up with bread instead of butter.yum
