Mix dry ingredients. In heavy saucepan mix milk and egg with wisk. Add dry mixture and cook on medium heat stirring constantly to boil. Reduce heat and cook additional minute. Remove from heat then add butter and vanilla. Serve hot or let cool in pudding dish then add cool whip on top.
Cook's Notes
Use different flavored extracts for flavor changes.

Puerto Rican coconut pudding
1 cup milk
1 cup half and half
2 cups sweetened coconut shreds
1-11/2 cups coconut milk
1/3 cup cornstarch
1/8 teaspoon salt
1/2 teaspoon cinnamon (optional)
1. Heat milk and half and half until bubbles just begin to form. Remove from heat.
2. Add coconut and let sit for 15 minutes.
3. Place milk and coconut mixture in blender or food processor and pulse for 30 seconds.
4. Place a strainer over a bowl and pour mixture into the strainer. Press on remaining coconut to release as much liquid as possible.
5. Measure strained liquid into a pot; add coconut milk and heat on medium.
6. Dissolve the cornstarch in one-third cup milk and whisk into hot mixture.
7. Add salt and stir until mixture thickens. Lower heat and stir an additional five minutes. Turn off heat and add cinnamon if desired.
8. Divide among four bowls and garnish with toasted coconut (made by placing three tablespoons shredded coconut in a dry frying pan and heating just until coconut turns brown.)

MAKES 4 SERVINGS
6 extra-large egg yolks
1/2 cup, sugar
1/4 cup, cornstarch
3 tablespoons, very good cocoa powder
a pinch of salt (about 1/8 teaspoon)
2 cups, milk
1-ounce, very good semisweet chocolate – chopped
2 tablespoons, unsalted butter
1 1/2 teaspoons, pure vanilla extract
2 tablespoons, heavy cream
In the bowl of an electric mixer fitted with the paddle attachment, on medium-high speed, beat the egg yolks and sugar until light yellow and thick. Lower the speed to low speed, and add the cornstarch, cocoa powder, and salt. Turn off the mixer while you heat the milk:
In a medium-size saucepan, bring the milk just to a boil and, with the mixer on low, slowly pour the hot milk into the egg/cocoa mixture in the mixer. Combine well, then pour the mixture back into the saucepan.
In the saucepan over low heat, cook the mixture stirring constantly with a whisk or wooden spoon, until thickened (it should not get much hotter than 160 degrees to avoid scrambling the eggs). If the mixture begins to curdle, remove it from the heat and beat it vigorously with a wire whisk to cool it quickly.
Remove the pan from the heat, add the chopped semisweet chocolate, the butter, vanilla, and heavy cream, and mix until the chocolate and butter are melted.
Pour the pudding into serving bowls. Place plastic wrap directly on the top of the pudding, and chill thoroughly.

Directions: In a medium saucepan over medium heat, stir together brown sugar and flour. Stir in milk. Bring to a boil and boil for 1 minute. remove from heat and stir in egg yolks and butter until smooth. Pour into serving dishes and chill 3 hours in the refrigerator before serving.
Rice Pudding
Ingredients: 1 1/4 cups uncooked white rice, 1 1/2 cups white sugar, 1/2 cup butter (melted), 5 cups milk, 2 eggs (beaten),
1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg,
3/4 cup raisins
Directions:
1) In a saucepan, bring salted water to a boil. Add rice, reduce heat, cover and simmer for 20 minutes.
2) Preheat oven to 350 degrees F (175 degrees C).
3) Combine 2 1/2 cups cooked rice, sugar, melted butter, milk eggs, cinnamon, nutmeg and raisins and mix well. Pour into 9x13 inch baking dish.
4) Bake in preheated oven until top is golden, 30 to 60 minutes. Serve warm or cold.
