How can I work in Australia or New Zealand?

Would like to work in Aus or NZ for a year or 2. I have been teaching English in the Orient for more than 3 years, so teaching is an option. Also have a masters degree in zoology and has been an overland expedition guide in Africa. I'm from South Africa. Need info I can work with, please.
