Irresistible Banana Bread

Rich buttermilk, crunchy nuts and flavorful, ripe bananas make this banana bread tops.

1¼ cups sugar
½ cup butter or margarine, softened
2 eggs
1½ cups mashed very ripe bananas (3 to 4 medium)
½ cup buttermilk
1 teaspoon vanilla
2½ cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1 cup chopped nuts, if desired
1 teaspoon salt

Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.

Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.

Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Indian Sweet Bread
A crisp and sweet flatbread that's fried on the griddle.

INGREDIENTS
2 cups all-purpose flour
1/4 teaspoon salt
2/3 cup water
1/4 cup white sugar
1 tablespoon vegetable oil

DIRECTIONS
In a large bowl, stir together flour, salt and water until a soft dough is formed. Turn dough out onto a lightly floured surface and knead briefly. Divide dough into golf ball size pieces and cover with a damp cloth or plastic wrap.
Select a ball of dough and roll out until very thin but not torn. Sprinkle lightly and evenly with sugar. Fold up dough into a small square and roll out again until thin.
Heat a lightly oiled griddle over medium heat. Place the rolled dough onto the pan and cook for 1/2 to 1 minute on each side until golden. Serve immediately. Repeat until all dough balls have been rolled and cooked.

I have looked high and low for my coffee cake recipe. I will edit this if I find it, because now I have a taste for it. I had moved the index cards on the fridge to make way for cookie recipes.

YES, go to the store and buy one, it takes only 5 minutes to go, instead of 20 minutes prepearing the ingredients, 25 min. baking and 5 min. leting it cool; this not counting the gas or electricity spend and the cleaning of the utensils and the time storing them for the next use.
So it is faster when you buy.
