From the expiration date marked on the carton...clean, undamaged eggs can last upwards of 6 months properly refridgerated.

They do age and you can tell by the viscosity of the albumin (the whites) when you crack them...If it is more of a solid and stands high and firm around the yolk, they are a younger egg, it the white spreads away from the yolk, it is an older egg. Or the float, older...not float, younger egg method.

When you prepare a dish and need volumn from the whites, older eggs are preferred because the albumin has broken down making it accept air easier. Also the reason you bring eggs to room temperature before whipping them for souffles and meringues...

Hope this is not to technical...it's a curse! LOL

Usually well past the expiration date. If in doubt, we use our egg-test method - works perfectly everytime.
Fill a pot with cold water. Put the eggs in (uncooked). If they float or bob up and down they are badddddddddd. If they sink to the bottom they are good. If they stand up on tippy toes but still touch the bottom then eat em quickly. We've been testing eggs like this for years and none have slipped past us yet.

About two months after the expiration date. Eggs last a real long time. When you crack open the egg....you will know immediately if they are spoiled or not. bad eggs have a smell that you cant ignore.

Once a week the fridge gets a going over. I have to otherwise we end up with Legos in the butter and half eaten cookies in the crisper. My kids are very helpful.

they can stay longer than 1 month if it still uncooked
