Mom's Chicken Noodle Soup
In medium saucepan, combine 2 cups water, 1 cup chicken broth, 1 slice celery stalk, 1 sliced carrot, 1 minced garlic clove, and 1/4 tsp. salt. Bring to boil. Add 1/3 cup ditalini (or other small pasta) and 1 lb.skinless, boneless chicken thighs, cut into 1/2-inch chunks. Cover and simmer 10 minutes or until pasta and chicken are done. Serves 4.
Barbecued Beef Sandwich
Combine 1/2 cup ketchup, 1 tbsp. red wine vinegar, 2 tsp. brown sugar, 1/2 tsp. ground ginger, and 1/2 tsp. yellow mustard. Brush half of mixture over one side of two well-trimmed 8-ounce sirloin steaks. Broil 6 inches from heat for 4 minutes. Turn, brush on remaining mixture, and broil 3 minutes for medium-rare. Thinly slice and place on 4 buns. Serves 4.
Pumpkin-Cheese Soup
In saicepan, saute 1 small onion and 2 cloves garlic in 2 tsp. oil until tender. Add 15-oz. can solid-pack pumpkin puree, 11/2 cups low-fat milk, 3/4 tsp. salt and 1/2 tsp. pepper. Boil 1 minute. Add 1 cup shredded Cheddar and stir until melted. Serves 4.
Meat Tortellini with Roasted Red Bell Pepper Sauce
Prep: 5 min / Cook: 10 min / 4 servings
In large pot of lightly salted boiling water, cook 12 ounces meat-filled tortellini until tender, follow package directions.
Meanwhile, in food processor, combine 1 jar (12 ounces) roasted red bell peppers and their liquid, 2 cloves garlic, 2 tbsp of olive oil, and 1 tbsp reduced-sodium soy sauce. Process until puree. Transfer to medium saucepan. Simmer over low here 10 minutes.
Drain tortellini. Just before serving, whisk 1 tbsp cold butter into red pepper puree. Stir in 3 tbsp shredded fresh basil leaves. Add tortellinin to red pepper sauce. Toss to combine. and serve.

On a weeknight were time is limited, I make a quick chicken parm with pasta or ravioli. This is what I do. I place chicken cutlets in a pan - oven to 400 I season them with salt & pepper and Italian seasonings. I then place one cup of chicken broth in the pan. Add 1 jar of ready made sauce And bake for 30-35 minutes - covered with foil. I then remove foil and place mozzarella on top And bake for 10 minutes until cheese is bubbly Meanwhile, I get the pasta water hot. As the cheese is melting I cook the pasta. Serve hot with garlic bread which is in the oven for the last 10 minutes. Within 45 minutes, I have a nice meal and add a salad to that, it's awesome. Plus it cuts down on the fat and calories of breading and frying the cutlets before baking. I hope you like my recipe and try it! Have a great day and thank you for a great question.

When I was little, my Mom liked to have meals where everyone helped. You could make homemade pizzas. The kids could top them as they like. Tacos are good and versitile. Soup and sub sandwiches are good as well. Breakfast for dinner is always a fun thing to do.

My kids love soft shell tacos with ground turkey instead of beef. I always slice us plenty of toppings, lettuce, tomato, avocado, onion, cheese and peppers. Taco sauce and sour cream.
Then I peel some oranges and put the slices on their plates as a side dish.

Chili, tacos, chicken cooked in cream of chicken soup over rice, a roast cooked in a crockpot with potatoes & onions, make a big pot of goulash & have it during the week, spaghetti & meatballs, grilled cheese & tomato soup
