I usually make chicken breast stuffed with blue cheese and then wrap it in smoked streaky bacon or pancetta- but i want something different- i was thinking feta and sundried tomatoes, any other ideas?

Try dry pan fried shitake mushrooms with garlic and and peppery salad leaf (rocket is good or basil), and buffalo mozzarella. Place in a hot oven (200c or Gas 6) for 20 minutes.
I find that serving this with oven roasted veg (we use Butternut squash, courgette, baby plum tomatoes, red onion amongst others, with a dash of olive oil garlic and Italian herbs) mixed with Feta. This should be placed in the oven 20 - 25 mins before the chicken.

I would butterfly my chicken and salt and pepper it. Set it aside and saute onion and celery in butter. Add cubed bread and brown slightly. Add a handful of raisins (regular or golden) to the mixture. Stuff you chicken breasts with this and secure with twine or toothpicks. Brown both sides of chicken in a pan with olive oil or butter. If you use an oven safe pan (cast iron or such) you can put the pan with the chicken right into the oven to finish. If not...just transfer the chicken to a glass bake dish.

This recipe is something my mother and grand-mom have been making for years. It has no measurements...they just showed me how to make it. It has no bacon but is still yummy.

A Herby stuffing, such as sage and onion, or put the bacon on the inside. Tomato, garlic and oregano for a Mediterranean flavour. If you want to use feta you could add spinach to it.

How about fry some chopped chorizo with red onions and garlic in a little olive oil until onions are soft, then put that in the middle of the chicken breast with some sundried tomatoes,yum.

I use 2 yellow crooked neck squash, 1 bunch of green onions, 1T. powdered chicken base, 1/2 C. grated yellow cheese, and 8 stone ground crackers. Put this in the food processor, (squash, then onions, cheese, and crackers, in any order.) Add chicken base and stir until mixed. Stuff chicken, and add salt, pepper and maybe some paprika if you have it, to the outside of the chicken. Cook, covered in a moderate oven 350 F. for 40 minutes. Uncover and cook about ten minutes longer until brown.

There is a recipe on this page for Broccoli stuffed chicken. It is really good and you can omit the cheese if you'd rather not have it. I think it would be great with bacon wrapped around it. I might have to try that next time.

I like to stuff them with asparagus and cheese or broccoli and cheese. Another way I make stuffed chicken breast is to make stove top sage stuffing (according to package directions) and add about 1/2 cup of dried cranberries to it. I use that to stuff chicken breast a lot.

i no this might sound obvious but some mushrooms and a good qauliyy stuffing with garlic is really nice and co simple feta and sundryed tomatoes sounds nice maybe add a litle basil delicious

Stuff the chicken breasts with crab meat and mushrooms, lightly bread the outside in bread crumbs. Serve with a white sause and swiss cheese. It tastes great.
