This is very easy but always a huge hit when I make it.

Lemon Chicken
Use 1 chicken breast/person
Cut chicken in large bite size pieces. Dip in beaten egg (with a tsp of water/egg added), then dip in bread crumbs. Let stand 10 min. Sauté in olive oil on 6 or 7 heat until cooked and golden brown.
Sauce:
Mix 1/4 cup sugar, 1/2 tsp cornstarch, 1/2 cup water. Microwave until boiling, stirring twice. Add a pinch of salt and mace. Add 1 tbsp butter and juice of 1/2 lemon (about 2 tbsp). Stir. Cook 20-25 seconds. stir. Pour sauce over chicken.
Garnish with lemon slices.

Simple Lemon Herb Chicken

This is a simple, quick and delicious dish. All you need are a few spices and of course, the chicken! The amount of spices are completely up to you. You can add more or less according to your taste.

INGREDIENTS

2 skinless, boneless chicken breast halves
1 lemon
salt and pepper to taste
1 tablespoon olive oil
1 pinch dried oregano
2 sprigs fresh parsley, for garnish
garlic to taste (optional)

1) Pound chicken to an even thickness.

2) Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium heat.

3) When oil is hot, put chicken in skillet. As you saute chicken, add juice from other 1/2 lemon, pepper to taste, and oregano and garlic. Saute for 5 to 10 minutes each side, or until juices run clear. Serve with parsley for garnish.

Prep Time: 10 Min.
Cook Time: 15 Min.
Ready In : 25 Min.

Lexi's Lemon Chicken

2 1/2 - 3 lbs. chicken breasts, bone in (6)
*Lemon Sauce

1 1/2 cups fresh lemon juice
1 cup extra virgin olive oil
1 tablespoon red wine vinegar
2 tablespoons honey
1 1/2 teaspoons minced garlic
1/2 teaspoons dried oregano
1/4 cups Italian parsley, chopped fine
salt and pepper to taste

Whisk all ingredients together. Cover and refrigerate until ready to use.

Preheat oven to 425F.

Rinse chicken and pat dry. Place chicken in a baking dish and pour the lemon sauce over it. Toss to coat well.

Bake chicken,skin side up, basting often with the lemon sauce for 35 minutes or until the juices run clear when tested (160F) and chicken is golden brown.

Serve with crusty Italian bread to sop up the juices.

This recipe is a little different as it also has broccoli in it. It tastes great though.
Lemon and Broccoli Chicken
chicken breasts cut in strips
1 can cream chicken soup
½ C. milk
1 T. lemon juice
1/8 tsp. garlic powder
1/8 tsp. pepper
2 C. broccoli flowerets, cooked
4 C. rice cooked
Cook chicken and set aside. Heat soup, milk, lemon juice, garlic powder, pepper and broccoli. Bring to a boil and add chicken. Heat through and serve over rice or egg noodles.

I always put a he nekkid chicken in a glass baking dish, rub margarine or butter on the skin, salt and pepper it. Then I take a fresh lemon, cut it in half and one half goes inside the chicken, the other gets squeezed over the skin. I add some fresh basil and chives and a few pearl onions to the inside of the bird and bake until it is done. It's yum!

Use chicken cutlet, or boneless chicken breast cut in half and poundedwith a meat mallet. wash chickenand pat dry, dip in egg and breadcrumbs brown on both sides in olive oil or shortning. Pre heat oven to 350 place chicken in flat layer in baking pan, add more oil to fry pan and at least 1 stick butter or margerine add spices garlic powder, onion powder, lemon pepper and parsley add lemon juice to your liking cook and stir to blend and thicken (could add a bit of flour or cornstarch) pour over chicken top with parsley and bake for about 1 hr or until chicken is tender. my family always enjoyed it......

Baked Lemon Chicken
3 tablespoons butter, melted
2 tablespoons lemon juice
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup seasoned bread crumbs
4 boneless skinless chicken breast halves (4 ounces each)
In a shallow dish, combine the butter, lemon juice, garlic, salt and pepper. Place bread crumbs in another dish. Dip chicken in butter mixture, then coat with crumbs.
Place in a greased 13-in. x 9-in. x 2-in. baking dish. Drizzle with remaining butter mixture. Bake, uncovered, at 350° for 25-30 minutes or until juices run clear. Yield: 4 servings.

chicken breast cutlets(skin on or off). Lemon pepper seasoning. Broil in the oven...Done.
