Because the time an aeroplane was in the process of disintegrating in the air and on the ground, they found the crew was unlikely to stick around repeating instructions.
With the festive crackling flames of good old JP3 aieroplane fuel burning, you can have a good time reading the last bit of instructions which are in simple, easy to understand animated form.
It will get your mind off of the impending meeting with your creator and give you something to do as the oxygen in your cabin is consumed by the fire and being converted into highly toxic plastic burning fumes.
So I say enjoy those entertaining animations, they stick by their post until the plane is consumed into random bits of smoking plastic and melted aircraft aluminum, or safely tucked away under hundreds of feet of saltwater.

Because international flights carry people of all different languages. It is much easier to have one standard that is used worldwide, then one for each individual language. Cartoons are easy to use as actions speak louder than words.
