Hey! try this one simple & delicious....

300g minced meat / beef
1 tsp toasted cumin
A pinch of grated nutmeg
1 tbsp oyster sauce
1 tbsp corn starch
Olive oil, salt and pepper to taste

1. Mix minced meat / beef with spices, corn starch and oyster sauce. Season with salt and pepper to taste and form into little balls.
2. Heat up a little oil in pan and slowly fry meatballs until golden brown, about 6 to 8 minutes on medium fire, shaking the pan so meatballs move around and do not stick.
3. Remove meatballs from pan and place onto plate. Season with salt, pepper and maybe some chilli powder. Or top with a squeeze of low-fat mayonnaise.

Have fun .... Enjoy! _;-)

This is a recipe that I actually use: MEATBALLS 1 pound lean ground beef 1/2 cup Italian seasoned dry bread crumbs 1 egg 1/3 cup minced onion 1 clove garlic, crushed 1/4 teaspoon salt 1/4 teaspoon pepper In a large bowl, mix all ingredients by hand. Shape into 1 inch meatballs. Arrange on two baking pans. Bake at 400 degrees about 10 minutes, until juices run clear and there are no traces of pink in meat. Remove meatballs to a plate lined with paper towels to absorb excess grease. Use immediately or let cool to room temperature and freeze for later use. Yield: 36 meatballs

3 eggs
1/2 C. Italian Seasoned Bread Crumbs
1/4 C. Pecorino Romano Cheese grated
1 Tbs. Garlic Powder
Salt and Pepper to taste
2 Tbs. Fresh Chopped or 1 Tbs. Dried Parsley
Mix all ingredients together in a bowl. Roll mixture into small ball shapes,(whatever size you like) I like to fry my meatballs in a pan with some vegetable oil until they are brown and have a nice crust on the outside, or you can bake them in the oven before adding them to your sauce. Definitely.
In a large bowl mix the meat with two eggs.
Add 1 cup of breadcrumbs
A little; salt, pepper, garlic, onion, oregano, parsley and rosemary (or pre mixed "Italian spices).
Mix thoroughly.
Preheat a large skillet at medium high. add a little oil when the pan is hot place golf ball to tennis ball sized "balls" into the skillet.
don't add too many at a time or the temperature will go down and stop them from browning.
Roll them around to brown all around.
Take out the golden brown ones and add more until finished.
When all are browned place them back in the pan and turn down the heat to med. low and cover and cook for twenty minutes.
Yummy!
You can add sauce to the pan and serve for sandwiches or add them to your sauce pot.

Sauce:
6 cans "Six in One" crushed tomatos.
1 bunch fresh basil
1 good size head of garlic
2 medium yellow onions, maybe 3 if they are on the smaller side.
1 pound ground pork (buy fresh sausages and take them out of the casings)
Oregano
salt
pepper
olive oil

Brown pork, throw in some olive oil and sautee onions, add the garlic, sautee for about 1-2 minutes. Add tomatos.Stir.Add basil, oregano, salt, pepper. Stir. Cook one hour on low heat. Add the meatballs. Cook for two hours

meatball recipe
3 - 4 pounds lean ground beef.
Dried garlic chips (in the spice aisle)
Fresh Parsley
Egg
A little salt
A little pepper
A good handful of fresh romano cheese
Italian Bread crumbs
Put this together to taste. I like it with a good amount of garlic chips and parsley. Don't go overboard on the breadcrumbs.

******IMPORTANT********
DO NOT FRY THESE MEATBALLS!!!! You put them directly in the sauce and cook them over that low heat for about 2-2.5 hours. Stir them occasionally. Do NOT FRY THEM!! Do NOT bake them. REALLY!!! Put them in the sauce and cook em!! This is the way it is done in italy!!!

I have two different things that I do with that combination of meats.

The first one is porcupine balls. Just add a cup of milk and half cup of raw rice to your meat mixture. Work in a half teaspoon of rubbed sage. Make into balls, lay in a 9 x 13 pan, and cover with a can of tomato soup. Cover with foil, and bake 325 for 1.5 hours. It is too easy and tastes better than it sounds. I serve it with scalloped potatoes and applesauce.
Second, is another super easy, hardly any ingredients recipe. Combine either 1 pound ground pork with 1 tsp. salt, and 1 tsp. rubbed sage with 1 pound ground beef. Add a 1/4 cup of milk and mix thoroughly, and make into balls. Mix one can cream of mushroom and one can cream of chicken soup together and pour over top. cover with foil and bake for 1.5 hours.

one lb lean ground beef, 1/2 lb ground pork (not sausage out of casing), oregano, basil, fresh minced garlic and white onion, Italian bread crumbs, egg, grated Parmesan cheese.

roll into balls

brown off what fat there is, bake then add to sauce about 10 min before serving.

my grandmother put a good chunk of Parmesan cheese inside each meatball...time consuming but an added delight
