I don't know if this will help, if he insists on eating meat and potatoes. But I was looking for healthy and interesting food a few days ago and came across a lot of delicious looking recipes, at this website http://www.mediterrasian.com/delicious_recipes.htm.
It is a collection of Mediterranean and asian recipes, and they look delicious. Maybe he will be willing to try new recipes if they are really tasty and a bit different to what you are used to eating. They are also a seven day eating plan, with a shopping list that you can print. (I will try that next week).
Another site I have been using a lot is The Worlds Healthiest Foods http://whfoods.org/recipestoc.php#recipes. There are a lot of excellent recipes. There are also a lot of side dishes. So if he insists on meat and potatoes, at least you can make a really healthy side dish for yourself, then eat a few potatoes and a healthy side dish.

Try making stew. The veggies for you, the meat and potatoes for him. and you get a little protein from the meat gravy. an he gets a little veggie juice.
My Mom would have told you to fix a balanced diet with meat and potatoes and fruit and veggies. It's us to the diner to choose what he/she will eat.
Solution: eat out more. He can have his steak and potatoes, and you can have your seafood. Everyone happy.
Watch Emeril, and make jambalaya, it has meat and seafood, and with all those spices, who could tell there is seafood in it.
Good luck.

You could make stir-frys. Cook the meat separate from the veggies. Let him put the meat on his portion and you can leave it off of yours.

Try lean meats - chicken, turkey, beef, pork. What about fish, lobster, crab and shrimp.

What kind of tips are you looking for. I make a lot of soups, 99.9% fat free, lots of veggies, whole wheat pasta or barley.

Cook for you and let him cook for him. If he doesn't want to cook, he'll have to get used to eating less meat.

Make some vegetarian meat for him. He'll still get his meat, except it's meatless and it's made from soy. Hee! Hee!
