What kind of damage does it cause?

Multiple things can happen, including....burning the valves, blowing the head gasket, blowing the intake gasket and throwing a rod(bye bye engine).

If the mechanical limits of the engine are exceeded due to it having too much Nitrous Oxide catastrophic engine failure will result (even if you keep the air/fuel ratio the same.

Too much NOx and not enough fuel = holes in pistons and burned valves.

too high rpms, engine will overheat, burnup, or fall apart at worst.
