Do you have the bagged frozen ones, or are you cutting your own with potatoes?
do you have a deep fryer? if you do that would be great, if not let me tell you.
If you have a large frying pan, or wok you can fill it with oil, and heat it, do not let the oil get too much but make sure that it is hot enough to cook. Test the oil with a fry, and if the oil starts to bubble around it, then the oil is ready. Put your fries in the oil and let it fry with a rapid movement until they turn golden brown. Immediately remove from oil and place on a plate with a paper towel on top to soak any excess oil.
IF: you do not want to fry in oil, then you can bake in the oven with directions on the back (if using the already cut, frozen fries)
Add salt/pepper/ketchup, whatever you would like.

Keep a bowl of water, add salt in that water, 2-3 lemone juice in water then cut the potato fingers in the same bowl, leave them in water for 10 mins then soak them in a cotton or muslin cloth and then deep fry them. It will be crispy like Mcdonalds french fries.

When u fry it in oil then add a pinch of salt in oil to make crispy french fries.

Let raw potatoes stand in cold water for at least a half-hour before frying in order to improve the crispness of French-fried potatoes. Dry potatoes thoroughly before adding to oil.

stand cut potatoes in plenty of cold water for at least half an hour,.drain & wrap in a kitchen towel,to remove excess moisture.,have ready deep fat,well heated,drop in some of the fries enough to cook comfortably,lift out partially fried & set aside.When ready to serve re-fry in hot oil,batch by batch,turn occasionally,lift out & drain on kitchen towels when surface turns a light golden colour,sprinkle salt before serving,do not allow to cool,this will ruin the crispness.

Cook's Illustrated latest issue did an article on that very same thing.
They have you soak the potatoes in cold water.
Rinse them and pat them dry.
Dust them with cornstarch. (This is what makes them crisp)
Fry them once, take out before they are done, then fry them a second time.
I have done all of the above when making mine, except for the cornstarch, so I will try that the next time I make them.

Yield- 2 Servings

Ingredients-2 Medium-sized potatoes per

Instructions-

-Serving Cold water Crisco Shortening to fry -potatoes Using knife or French-fry cutter cut peeled potatoes into 1/4" strips.
-Rinse or soak in cold water.
-Start heating enough Crisco Shortening to fill a 3-quart saucepan half full or a deep fryer within 1/2" of the fill mark.
-Dry potato strips thoroughly on paper towel.

FOR EXTRA QUICK FRENCH FRIES-

-Heat deep Crisco Shortening to 365 degrees F.
-For electric deep fryer follow manufacturer's directions for amount of potato strips to fry at one time.
-For saucepan cook 2-3 cups of potato strips at one time adding slowly.
-Cook until potatoes are tender and lightly browned about 10-15 minutes.
-Drain potatoes on paper towel.
-While frying remaining potatoes keep fried ones warm in oven set at low temperature.
-Salt or season as desired.
-If desired frozen French fried potatoes can be used in place of fresh potatoes.
-For best results fry about 10-15 minutes in Crisco Shortening using the above directions.

FOR EXTRA CRISP FRENCH FRIES (FOR FRESH POTATOES ONLY)-

-Fry potatoes FIRST time at 325 degrees F. for about 3 minutes.
-Remove and drain on paper towel.
-Cool at least 15 minutes at room temperature.
-If desired cool up to 3 hours.
-To serve re-heat crisco to 365 degrees F. and fry potato strips a second time for 6-8 minutes or until golden brown.
-Drain on paper towel.

Buy Orieda. They're coated with something and always crispy. Cheap fries don't do the same.

i have a really awesome thing...just cut them up into the way u want..then put them in the fryer....and fry them half way. then give them some time set them for a while and go finish sometihing else like the other part iof them meal or what not..then when u r like ready to sit downa nd eat...drop 'em back in....till they finish they r gonna be golden brown more gold -k-..i ALWAYS do it and its rocks!!! good luck
