pasta will never go wrong. or vegetables stir fry and rice plus beef teriyaki.

i often cook up a roast chicken, even though it is just for two people. That way the left over chicken is great shredded up cold in a salad for dinner the next night as well.

i also cook meatloaf, spaghetti bolegnaise, pasta bakes etc.

These are all good leftovers that can be halved and frozen for next time.

You could easily grill some salmon and make a small salad to go with it. It doesn't take too long and it is a very healthy yet delicious meal. Remember to bath the salmon in lemon juice and salt if you wish. Hope it helps.

You must purchase thick cut tenderloin steaks, ask your butcher to butterfly them. Marinate in red wine. In a sauce pan, saute one mushroom, one garlic clove, 1/3 of a yellow onion, 1 tsp fresh organically grown rosemary, (all but the rosemary finely chopped) in olive oil, steak seasoning, red wine. Allow to cool, then carefully spoon into steaks. Seal closed with toothpicks. Broil. Heaven. Promise.
