Sometimes they do, but then if they think people will laugh at them, think differently of them or treat them weird, then they usually will not say anything, but come on, if an American from New York or Ohio went to China, I think they would be able to tell. Even if an American went to Canada, the accent would give them away. And most European countries are that way. If an American went to France or Germany, the way they dress, act, talk would give them away.

Yes, if they have something to hide or are ashamed of their country. However, they will have to do this in casual conversations as their passport indicates their true country of origin. Two exceptions to this are: Dual citizenship, they can use either passport; or, they are traveling on false passport(s), which is a crime.
