some other way to fix my chicken without breakin the rules,I have
gotten so I have no problem eating it every day.but would sure like a new way to fix it.I also eat browe rice every day , I get joked at lunch time, because my menu never changes.I always eat cereal
for dinner, so there is no problem there.Always wheat or bran.I hope you can give me some hope, something I can take to work
and get eoo and arr about.thanks for any help you can give. BOOBOO

Eating the same thing every day, even something healthy, is not good for you. Your body required variety in your diet to ensure you get adequate nutrition. See a nutritional consultant or buy a book on nutrition. I recommend looking at www.drweil.com for some ideas on healthy eating. His books have pretty good eating plans, too.

I recently found myself in the same predicament after eating chicken and turkey instead of beef or pork, and keeping the skin off of both, and watching all the labels on the food products I bought. I then learned that since my accident, and my very significant reduction in exercise, that all the carbohydrates I was eating but no longer using, my triglycerides had escalated WAAAYYYYYYYYYYY beyond the healthy limits, AND, my doctor told me that triglycerides convert to cholesterol over time, so, he said, I had to stop all my snacks, AND, had me begin a Niacin regimen of 500mg daily, AND resume some exercising, even if it's just walking a short distance even though I had lost one of my legs above the knee. I did so and the next time I went in to see the doctor, I had very significantly dropped my triglycerides, by almost 75%, and dropped my cholesterol around 25 points to below the maximum level doctors like, and dropped 10 pounds. My doctor was very pleased with my performance. I say this to encourage a wider look at your situation besides learning how to cook chicken in an increasing variety of ways. My wife is a wonderful cook and very "into" cooking for my health, so I have no problem there, but I can't give you any cooking advice. I just want to encourage you to check up on your snacking and your carbohydrates, tricglycerides, and exercise. Oh, I can tell you that my wife uses frozen turkey sausage when she fixes spaghetti sauce. It seems to have a lot of cholesterol, but she assures me that it is the "good" cholesterol, or HDL cholesterol, and so it's good for me. But, as I've already hinted, cooking is not my forte, but lowering cholesterol is, and I advise some light exercising and stopping the snacks if you haven't done so already. Best wishes. Try eating more vegetables. Also, oatmeal (not the instant kind) will reduce cholesterol. There's a book called 365 Ways to Cook Chicken that should give you some good recipes. I also like adding spices to everything. Penzeys.com is a great website for finding wonderful spices, and it's not expensive, and they'll ship it all to you. I like their Fox Point seasoning, and also their Murals of Flavor.

Eat Oatmeal in the morning for one of your breakfast dishes

Take omega-3 fish oil tablets two times a day

Exercise more---it will get your body moving

Eat a cereal with lots of fiber. Fiber lowers your cholesterol and makes you feel full.

Remove skin from chicken, try chicken salad.

Take a multivitamin each day.

Hi booboo!!!

Chicken is good!!! But I sggest to based you diet more in vegetables, especially the green ones!!! Like broccolli, esparragus, cucumbers spinach, brussels spouts, and of course lettuce, tomatoes,carrots, peppers, onions celery,all this good stuff!!!!

And on top of all yhose goodies, serve your chocie of meat,
"Chicken Cacerole". You should buy chicken breasts, for this:

Ingridients: Chicken breasts, one packet of chicken bunions,
or chicken broth, one big onion, half a green bell pepper,1 carrot,garlic cloves(1 or 2), a teaspoon full of vinegar, (paprika for coloring).
Water. And a teaspoon full of vegetable oil.

Easy!!! Cut the chicken breast, how ever you like and wash. In a cacerole, warm the vegetable oil, at medium to low heat. Quickly place the chicken letting it cook for about 2 or three mnts. each side.

Pour about 2 cups of water in cacerole, add chicken bouinion(1 ). Chop or cut the onion, carrot, pepper, and mince the garlic, before putting in with the vinegar. Cover, let simmer until tender. Stirring ocasionally. If the water evaporates too quickly, add as needed until the chicken is cooked.

Check the heat to be at lower heat,temperature and add paprika for coloring. Cook until the all the ingredients make a sauce like appearance. The more you stirr the better the appearance of the sauce. The chicken shoud be very tender, even flaky.
It shouldn't be watery. You can make as much chicken as you like. Just add more ingredients to balance.

Serve over A LOT of vegetables, or A LOT of salad(no need for dressing). Over you brown rice, some tricolor pasta!!!
Over tosted bran, or wheat bread!!!! Wheat tortilla!!!!

I like to cook up some long grain brown rice and put it in a baking pan over some chicken pieces. Put in some sliced carrots, onions, potatoes and mushrooms. Pour cream of mushroom or cream of celery soup over that. Sprinkle a little chicken boulloin over that. Cover with foil and bake in the oven at 400 degrees or so for about 45 minutes to an hour. It's pretty good. Entire meal in one pan.

what about eating turkey? or chili made with ground turkey? or chicken salad sandwiches made with Lite Miracle Whip? What about a big old turkey sub sandwich with lots of veggies?

Try this unusual breading for your chicken.

1 chicken breast cut into 1/4" cutlets
Breading:
1 slice of fresh whole grain bread, processed into medium fine breadcrumbs.
1-2 TBSP finely ground pistachio nuts
1 TBSP wheat germ
Generous dash of Mrs. Dash seasoning
salt & pepper to taste
Combine breading ingredients

1/2 cup low fat milk or egg substitute
Dip cutlets in milk or egg substitute. Either sautee in olive oil or coat an oven proof dish with cooking spray. Bake for 15-20 minutes till juices run clear.

Serve with tropical fruit salsa.
1 can Tropical fruit cocktail, drained and finely minced.
1 chopped tomato
1-2 green onions chopped fine
1/2 green, yellow or orange pepper chopped fine
1-2 TBSP of your favorite salsa
Optional 1 small Jalipino pepper chopped
Hot pepper sauce to taste.
Combine all ingredients. Great on pork, chicken, veggie burgers or brown rice!

Are you aware that you can also eat turkey, Cornish game hen, duck and goose. There are other means of fiber also, yams, beans, flax are good examples. Green and yellow vegetables are a must--My goodness, you can eat a different meal everyday for a year. You should buy some of the diabetic magazines and follow the recipes, you are really missing a lot.

Have you bake fried it? Ground chicken burgers? Barbecued? Chicken Salad? Chicken stir fry with vegetables? You can mix it with a new product called Shirataka noodles, that are tofu and Yam Flour and taste pretty good and make a nice Chicken Spaghetti.
