I'm snowed in and need to make brownies. (Yes, I said, need.)
I'm out of eggs. What can I use in their place?

2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

Eggless Brownies

8 tsp. oil
1/4 c. sugar
1 tsp. vanilla extract
1 tsp. chocolate extract
1 tbsp. plain lowfat yogurt
3/8 c. cold water
3/4 c. flour
2 tbsp. cocoa
1/2 tsp. baking soda


Preheat oven to 350 degrees.

In a medium bowl, combine dry ingredients, mixing until blended.

With a spoon, make a well in the center. In a small bowl, combine remaining ingredients, mixing with a spoon. Pour into a well in dry mixture. Stir until all ingredients are moistened.

Place batter in a 4 x 8 inch nonstick loaf pan or one that has been sprayed with a nonstick cooking spray. Bake 15 minutes.

Cool in pan on wire rack.

Unless you have egg substitutes available (store bought carton)
then you're pretty much out of luck. You can use baking powder for the leavening portion but you will not get the richness and flavor of the eggs.
