On the Hershey's Cocoa container there is a recipe for "Perfectly Chocolate Chocolate Cake" and icing. It is to DIE for! My dd and I don't like cake except for this one - everytime I make it I get requests for the recipe. It is very simple too - no sifting or folding in ingredients or anything!

"This is a rich chocolate cake with a fudge frosting. If you don't have sour cream, you can use sweet cream and add 1 tablespoon of lemon juice or vinegar."
INGREDIENTS:
2 eggs
1 1/2 cups sour cream
2 tablespoons shortening
1 1/4 cups white sugar
2 cups all-purpose flour
4 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
1 teaspoon vanilla extract
2 teaspoons baking soda 1/4 cup hot water

2 cups white sugar
1/4 cup light corn syrup
1/2 cup milk
1/2 cup shortening
2 (1 ounce) squares unsweetened chocolate
1/4 teaspoon salt
1 teaspoon vanilla extract

DIRECTIONS:
1. Beat the eggs in a large mixing bowl. Melt the 2 tablespoons shortening, and add it and the sour cream to the eggs.
2. In another bowl, sift together 1 1/4 cups sugar, flour, cocoa and 1/4 teaspoon salt. Add these dry ingredients to the egg mixture. Stir the batter until smooth. Add in the vanilla and stir. Lastly, add the soda dissolved in hot water. Stir.
3. Pour batter into a greased and floured 9 x 13 inch pan. Bake at 350 degrees F (175 degrees C) for 35 minutes, or until done. Cool.
4. To Make the Frosting: Combine 2 cups sugar, corn syrup, milk, 1/2 cup shortening, unsweetened chocolate, and 1/4 teaspoon salt in a small saucepan. Stir over low heat until chocolate melts. Bring to a full rolling boil and boil for one minute, stirring constantly. Remove the pan from the heat. Add 1 teaspoon vanilla, and beat the frosting mixture until it has a smooth spreading consistency.
5. Frost the cake when it has completely cooled.

Why make it from scratch? Buy a box of ....say....lemon cake. Add
a can of crushed pinapple (16 oz) add three eggs and bake 40 min. at 350 degrees. The crushed pinapple replaces the oil and water called for in the recipe. Pick other complimentary flavors like: chocolate and Cherries. Spice cake mix and applesauce. I actually made this cake in the microwave using a special tupperware pan that looks like a bundt pan or any other bundt type-that is microwaveable. Very moist and very good....tastes like homemade and done in 12 minutes or so.

look on the back of a coco box the chocolate cake reciepe is delicious
another one is
1cup butter
2cups sugar
1cup hot milk
3 cups flour
4 tablespoons baking powder
4 eggs
2 teaspoons vanilla
heat oven to 350
grease pans with the grease then flour
cook for like 30 min.

I made up this recipe: cherry upside down cake:
prepare batter for a white cake. Drain the syrup out of a jar of cherries into a bowl. Mix the syrup with cream cheese until smooth. Grease cake pan. Dump cherries into pan. Pour pink cream cheese into batter, mix only slightly so that the batter becomes marbled. Pour batter into cake pan over cherries. Bake for slightly longer than you normally would. Make sure you allow it to cool completely before turning cake out. This is absolutely original and delicious. No need for frosting or decorating.

i've used a couple different chocolate cake recipes, but one ingredient that seemed to make it be moist and stick together was blackberry jam. if you're going to be making chocolate cake i'd try that out :)
