May hamper your turning radius.

Go for it, your new set of tires is only 1.6in taller and 1.2in wider. It wouldn't be a problem. Remember that if they are 1.6" taller one half goes below and the other over the rim, so your need for 0.8in extra in clearance won't be a problem.
In the width you've to be careful about the rims, checkout the % in the negative side.

Yes you can but make sure you test fit them for clearance issues as you may have to trim the black plastic air dam on the front bumper. I was told this by a tire guy

if this is a truck then you can go with a 265/75r/16. my dakota can use the 245 or the 265. but I odnt think you would have a rubbing problem with the size your asking about. but dont wuote me on it lol.

That would work, but your speedometer will be about 3 mph slow.
go with 275/60R18 and your speedometer will be only 1.1 mph slow.
