PhDs who study bone are likely to be physiologists/anatomists
There really isn't a field of medicine that studies bones, they are treated just like any other part of the body. Pediatrics for kids, Internists for adults etc....

However, other doctors also deal with bones, such as rheumatologists, who study the inflammation of different body parts including bones.
