talk about favorite everythings.. everyone has favorites... talk about any fun stuff about when you were really little, talk about tv shows, movies, books, whatever...
Ask her about herself, but don't let her do all of the talking, talk about yourself, too.

No easy answer here.
People often mislable a person a "shy," when they are quiet of stuck for words when around other people.
Often, it is just a matter of extroverts expecting everyone to be like them. They think that if someone's not talkin"-especially in a dating or social situation with the opposite sex--that they're insecure and shy.
The problem is introvets are wired to be thinkers, and do not necessarily have the abiliity to talk off-the -cuff, and glibly.
If you and your GF are comfortable with out a lot of conversation, then recognize it, talk about it, and find out what is a gooc common subject. You might me uncomforatable dating a "chatty Catthy," and she might be enthralled by a talkative egotist. But neither makes for a good relation ship very often.
Find out what each other likes, and start with that as a basis for conversation. Or get comfortable watching movies and talking about them later, etc, etc.

Talk about everything is your life and more importantly, ask her questions about what she likes, enjoys and feels. Try to identify common interests in books, movies, food, friends and everything else and then try to learn about the things she is interested in but you have never considered before. If she likes poetry and you know nothing about it, try to research it a little.
The relationship should make your life more interesting and help to open the world up a little more. Maybe she will learn a little about car maintenance from you and you will learn a little about dress making. You will certainly learn more about each other and probably more about yourselves.
Do not be afraid of silence. You do not have to talk just because there is no noise. Sitting quietly together watching the gras grow is nice too.
