Scrapple is a savory mush in which cornmeal and flour, often buckwheat flour, are simmered with pork scraps and trimmings, then formed into a loaf. Yes a scrapple is good.

Scrapple

1 lb sausage
2 cups water
1 tablespoon red pepper flakes
1 teaspoon rubbed sage
1 cup cornmeal

pour 2 cups of water in a sauce pan and bring to a boil.
cut sausage into pieces and add to boiling water mixing throughly (a potato masher works well) Once sausage is done take pan off heat and add red pepper flakes and sage.
Add Cornmeal and mix throughly and pour into loaf pan.
Refridgerate until completley cooled.
slice and fry in frying pan with cooking spray.

Scrapple is an acquired taste. It's common to South Jersey and around the Philly, Pa area. I personally LOVE IT. But I also grew up on it. I like it sliced thin, really crisp, and with ketchup. It can be mushy. It's made up of all kinds of things ( pork parts, intestines, some leftovers and lots of spice, I prefer not to think about whats all in it because it's so darn good )

Scrapple is a New England thing. It's basically pork fat with a few loose pieces of meat in it. Comes in a brick.

Think of it as poor man's bacon.

oh man-you dont want to eat that, I was just looking at a package of it last week--in the ingredients are
pork butt, lips, tail, 'byproducts', bone
and a bunch of other nasty stuff.
