i am having my in-laws over for dinner and would like to make a chicken stew.....could you help me with a recipe....if possible could you note if i could make it in a crock-pot? they are coming in a weeks time....i am thanking you ahead of time for taking the time to help me out!! thanks!!

yes you can use crockpot and good luck!



INGREDIENTS:
2 pounds boneless, skinless chicken breasts, cut in 1-inch cubes
2 large onions, quartered and cut into 1/2-inch slices
1 cup baby carrots, or 2 large carrots cut into 1-inch slices
3 medium potatoes, cut into 1-inch cubes
3 1/2 cups chicken broth
1 teaspoon celery seed
1 teaspoon dried thyme
1/2 teaspoon black pepper or seasoned pepper mix
salt to taste
8 ounces sliced mushrooms
1 cup frozen corn, thawed
1 cup frozen peas, thawed
PREPARATION:
Combine all ingredients, except peas, in the slow cooker/Crock Pot; stir well. Cover and cook on low 6 to 8 hours, until chicken is done and vegetables are tender; stir in peas the last 30 minutes.
Serves 6 to 8.

Inlaws - ouch! This one will impress the mother in law!

8 chicken thighs (boneless/skinnless)
1 large sweet potato
1 large rutabaga
2 large parsnips
2 large carrots
1 large red onion
1 turnip
1 carton chicken stock
salt and pepper to taste
Flour to thcken stew

Marinate thighs in Kraft sweet onion vinigrette. Cut up and sautee. DIce veggies and put in a large pot with stock. Cook over a med heat for about an hour, until veggies are tender. Thicken stew with a flour/water mix. You can also do this in a slow cooker. I've never used one myself, but just put it all in and leave it for 6-8 hours? Serve with crusty buns and Yum!! It's a great winter comfort food, especially if it's cold where you live!

Don't make it harder than it is! Chicken soup is easy to make from raw chicken. Here's how: Put a raw, bone-in piece of chicken (breast, leg-thigh, whole back, 4 wings) in a 2-quart pot. Cover the chicken with water to the first knuckle of your forefinger. Chop a small onion and put the onion in the pot. Slice a rib of celery and put it in. Shred a carrot and put the shreds in. If you like mushrooms in chicken soup, add 1/2 cup Add any herbs that you like with chicken--rosemary is good, thyme is good, and basil is good. Bring to a boil, reduce heat to simmer, and simmer for 45 minutes. Remove the bones and skin, if present. Add a handful of noodles and cook 10 more minutes. Salt to taste. Voila, chicken noodle soup. If what you want to do is use LEFTOVER rotisserie chicken, put the carcass in the 2-quart pot, water to the first knuckle of your forefinger, add the veggies but no additional herbs. Cook about 20 minutes or until the meat falls off the bones. Remove and discard the bones and skin. You can add noodles or rice or you can make cream soup by mixing 2 tablespoons of cornstarch OR 1/4 cup all-purpose flour to 1/2 cup water and stirring it into the soup, cooking until it's thickened. Salt to taste.

CROCK POT CHICKEN STEW

5 chicken thighs, skinned & boned
2 lg. cans whole tomatoes, sliced
2 cans tomato sauce
1 bag carrots, peeled & cut into thirds
6 or 7 lg. potatoes, peeled & cut into eighths
2 cans whole kernel corn, drained
2 basil leaves
1/2 c. minced onions

In crock pot, add chicken, tomatoes, tomato sauce, basil, onions and 2 cups water. Let cook on high for 1 hour. Check chicken for doneness and tenderness. Take chicken out and cut into pieces. Place chicken, potatoes, corn, and carrots into crock pot into tomato mixture. Turn crock pot on low and let cook whole day. Serve over rice.
