Broccoli-Stuffed Ricotta Shells
Ingredients:

6 cups coarsely chopped broccoli flowerets and peeled stems
1 small onion, chopped
1 garlic clove, pressed or minced
2 cups part skim milk ricotta cheese
2 eggs* 1/4 tsp. white pepper
1/2 tsp. dried rosemary
1/4 tsp. nutmeg
28 Jumbo Pasta shells (7 oz. Total)
4 cups marinara or meatless spaghetti sauce
* Replacing the 2 eggs with 4 egg whites will lower the cholesterol and calorie content of this recipe.

Prepare sauce. In large saucepan, cook broccoli in 1 inch boiling water 8-10 minutes or until tender; drain. Finely chop broccoli in a food processor or with a heavy knife; set aside. In a small skillet sprayed with Pam, over medium heat, sauté onion and garlic: cook until onion is soft. Remove from heat; cool. In a large bowl, stir ricotta cheese and eggs together until well blended. Add pepper, rosemary, nutmeg, onion and chopped broccoli. Mix well. Cook pasta shells 8-10 minutes or until tender, but firm to the bite. Drain and rinse with cold water. Stuff each shell with 2 1/2 tablespoons of broccoli mixture. Pour 1/2 of sauce into a 9x13 inch pan. Arrange filled shells in sauce and spoon remaining sauce on top. Cover and bake in 350 oven for 30 minutes. Yields 8 servings.

Rachel Ray's Vodka Cream Pasta
"You Won't Be Single for Long" Vodka Cream Pasta

INGREDIENTS

* 1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
* 1 tablespoon butter
* 2 cloves garlic, minced
* 2 shallots, minced
* 1 cup vodka (high quality)
* 1 cup chicken stock
* 1 can crushed tomatoes (32 ounces)
* Coarse salt and pepper
* 16 ounces pasta, such as penne rigate
* 1/2 cup heavy cream
* 20 leaves fresh basil, shredded or torn

Serve with crusty bread, for passing

Heat a large skillet over moderate heat. Add oil, butter, garlic and shallots. Gently sauté shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan (3 turns around the pan in a steady stream will equal about 1 cup). Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.

While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

I am a pasta freak...I love pasta...almost any kind! It's hard to choose ONE favorite...but this is definitely on my top ten list:


Pasta with Creamy Pumpkin Sauce

1 pkg. (16 oz.) penne pasta, uncooked
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup (1 stick) butter or margarine
1/2 cup milk
1 cup canned pumpkin
1/2 tsp. ground red pepper
Ground nutmeg to taste

COOK pasta as directed on package.
MEANWHILE, place cream cheese, Parmesan cheese, butter and milk in large saucepan; cook on low heat until cream cheese is melted, stirring frequently. Add pumpkin and spices; cook until heated through, stirring occasionally.
ADD pasta; toss lightly. Serve topped with additional Parmesan cheese, if desired.

P.S. Let me say this doesn't really taste like pumpkin...it's just really good and creamy. It's not spicy either. It's very very good. I hope you try it!

try this simple but awsome recipes (for me...)

first of all, boiled a desired pasta, i prefer fettuccine and penne

heat butter or olive oil, add chopped garlic, add sliced mushroom, add the pasta, seasond it well, with salt and crusted black pepper, add freshly grated cheese (parmesan and or cheddar) serve it right awat.

pasta with pesto is also quick and easy, first you heat oilve oil in a pan, add the pasta, add the tablespoon of pesto, reduce the heat (to prevent the basil burned) tos it well, add parmesan, and adjust seasoning

sometimes i add sauted bacon onto it... or maybe sliced german sausage sauted with chooped onion.

mix cooked penne with ricotta,shredded mozzerella,shredded parmesan,shredded gruyere and chunks of mascarpone cheese.then add 1 egg,some chopped tomatoes,fresh chopped basil,salt,pepper and a little heavy cream.spoon into individual bowls and top with some more mozzerella and parmesan and bake for about 20 min until the top is crunchy or however you like it.you can also add some chopped asparagus and alittle tomato sauce.however you like

Actually, I like lasagna the best. It's meaty and very hearty. There is a really good recipe on this site.
