Will be there for 7 - 10 days, hiring a car. Would like to try jetboating, kayaking, etc; but not really extreme stuff like bungy jumping.

If you are into hiking consider the Routeburn or the Milford Track. They offer views that are unparalleled. If not at least take the train across the Alps.
Christchurch is a very neat city, take a ride on the Avon. The days can be amazingly long in Dunedin during the summer. The Moeraki Boulders are very unique.
The only thing I can say for sure is that you will probably want to go back. No matter how much time you give yourself it will not be enough... there is simply too much to see.
Have fun on the mainland!

Queenstown - skiing, birthplace of Bunji, rafting, adventure tourism, jet boating
Fiordland - Milford and Doubtful sounds, Walking tracks, lakes, wildlife
Marlbrough - Wine trails, Nelson town and beaches, Abel Tasman National Park,
Hamner Springs - great hot springs here and pretty in winter - loads to do in summer as well.

Kaikoura - see the whales and dolphins
Christchurch - the Antarctic Centre is supposed to be great!
West Coast - Heli-hike on Fox Glacier - it was fantastic!! :-)
Queenstown - where to start???? Jet boating, skydiving is supposed to be great there (I skydived in Nelson)
Milford Sound
The view from the ski lodge at Lake Ohau was fantastic!!!
