You could use plain rice flour - you can also make a marinade by blending rice flour, curry paste, chili, lemongrass, a bit of rice wine vinegar... otherwise just use plain chicken :)

Use regular flour, or corn starch. Even some bread crumbs that say for breading on the container.

Bread crumbs...found on the aisle at the grocery store where the shake and bake is. You could also crush potato chips and bread the chicken in them before you fry. It is yum-oh!
