The skin needs to stay on the potatos when cooking it. This keeps the flavor, and nutrients in the potatos when cooking.
I like to bake the potatos in the oven, or toaster oven.
When boiling do the same thing with the potatoe skin, leave it on. Just scrub the skin with a dish scrubber, this removes the ugly stuff from the skin. That way you can eat the skin too.
So any way you cook the potatoe is fine, as long as you leave the skin on. You can peel the skin off when the potatoe is cooled down, if you don't like skin. Just use a fork, and scrape down wards.

Many will disagree with me...I think broiled. I really don't eat potatoes that often b/c I don't do super-starchy foods, but when I do eat them, I really like the little red ones with the skin on and broiled. If they are slightly seasoned with garlic and margarine, mmmmmm!
I once heard that baked potatoes are one chemical reaction away from pure sugar. If you've ever burned a sweet potato, the burned crispy stuff is actually burned sugar. (And NO, I did not have any spices/seasonings on them at the time, so it was from the potato). I'm not sure how healthy that is.......

Here is my moms award winning recipe its delicious!
1. Ingredients1/3 cup extra virgin olive oil
2 large Spanish onions, sliced into thin rings
5 medium russet potatoes, thinly sliced
Salt and freshly ground pepper
6 ounces sliced smoked salmon
7 large eggs
Nutrition InfoServing size: 8 servings
Calories: 293 kcal
Carbohydrates: 27 g

2. Cooking Directions
In a 12-inch ovenproof nonstick skillet, heat the olive oil over medium-high heat until it ripples. Lower the heat to medium and add a layer of onions. Top with a thin layer of potato slices, season with salt and pepper, then add another layer of onions, potatoes, salt and pepper. Add the smoked salmon in a single layer. Continue layering the onions and potatoes, seasoning as you go. Let the layers cook, pressing down gently to flatten. After 10 minutes, cover with a lid and reduce the heat to low. Cook until the vegetables soften, up to 25 minutes more. Remove from the heat.
In a medium bowl, whisk the eggs and pour them into the skillet, lifting the layers with a spatula to let the eggs in. Jiggle the skillet to prevent sticking. Return to low heat, cover and cook for 10 minutes. Remove from the heat and shake gently.
Preheat the broiler. Place the skillet about 3 inches from the heat and cook until golden, about 6 minutes. Let rest for 20 minutes. Shake the pan gently to loosen the tortilla, place a serving plate over the top and flip to release.

I would imagine the healthiest way would be in a pressure cooker. It requires relatively little water, and is very fast, so that vitamins are not lost. Contrary to popular opinion, as long as you follow the directions, pressure cookers are VERY safe; my mother had one when I was a kid, and I got one when I married - I can't imagine my kitchen without it!

skin on is the best its a lot of nutrition in the skin. oven is better than micro-wave watch what you put on them to keep them healthy olive oil and fresh garlic kosher salt and white pepper enjoy
