be sure to drape it with foil after you take it from the heat to retain the juices - let it set for about 5 minutes before serving

If you buy sushi grade salmon, it could remain raw and not be an issue.

(Sushi Grade = Fish that is suitable for eating raw must be frozen for seven days at negative 4 degrees Fahrenheit, or flash frozen for 15 hours at negative 31 degrees. Cold is used to kill organisms.)

Between 130 and 135 degrees F. Don't let it get too high or the salmon will be dry/tough and lose that delicious flakiness.

120 is good. also put under the broiler for 3to4 minutes this will give it a nice golden color enjoy
