i had these chicken breasts but felt kind of lazy so I just made a quick dry rub with whatever spices (salt pepper paprika curry cumin), and threw it in the oven...what do you guys and girls do?

I just do a similar thing. Defrost the chicken the night before, and marinate it overnight too.
When I get home, I just put it in the oven. While I do work on the computer, or take a nap. My marination consists of, soy sauce, vinegar, black pepper, garlic diced, onions diced, and a bay leaf. You can add a little water to give it some more liquid, so that the whole chicken can be covered in the marination.
Not to much for the chicken has liquid in it all ready. Bake for an hour at 350 degrees. Unless it is breast only, then for about 45 Min's.

I make chicken quesadillas with flash frozen chicken breasts. I cook the chicken in the oven and when they are done, I cube them up and throw in a skillet with teriyaki sauce. I cook just until the chicken is moist and has absorbed a lot of flavor. I put this on a tortilla, top with spicy cheese, put on another tortilla and warm in the skillet until the cheese melts. Cut into triangles and serve with salsa and sour cream. Easy and really good.

Slow cooker to the rescue!!!! These are two of my favorite recipes for the slow cooker right now:


Chicken Chili

1 (48 oz.) jar deluxe Great Northern beans
1 (4 oz.) can diced green chilies
2 (10 oz.) cans chicken breast, NOT drained
1/2 cup frozen chopped onion (or raw diced)
1 1/2 tsp. chili powder
1 cup chicken broth
Sour cream

Spray slow cooker with cooking spray

In the cooker add beans, chilies, chicken, onion, chili powder, and broth. Mix well.

Cover and cook on high 3-4 hours -OR- low for 6-9 hours

Stir 1 Tbsp. sour cream into each 1 cup serving

Yield : 9 Servings 1 cup each

Creamy Chicken Soft Tacos

4 frozen boneless, skinless chicken breasts
1 jar (16 oz.) salsa
1 cup sour cream
6-8 flour tortillas

Place chicken in greased slow cooker. Pour salsa on top. Cover and cook on high heat 6-8 hours or on low 10-12 hours. Shred chicken by pulling apart with 2 forks. During last hour of cooking stir in sour cream.

Put chicken in tortillas with your favorite taco/burrito toppings.

(My husband and I LOVE this recipe…we have found that we needed more like 10 tortilla shells as this made A LOT of chicken…we used black beans, extra sour cream, lettuce and shredded cheese as our toppings…we made burritos instead of tacos…this is SUPER easy to make and it tastes SO good!!)

Toss it in a pan with a little water for steam and some spices, cover it, put it on simmer, and it turns out to be the best tasting, most tender chicken!

Or put the chicken away until tomorrow and order from Takeout Taxi.

Take the chicken breasts and put them in a baking pan pour a can of cream of mushroom soup with a tad of milk mixed in
on them and cook for 45 minutes. No effort :)

When I am lazy (at least twice a week), I like to throw together my most perishable ingredients into a soup of sorts that can simmer for an hour or two without my attention.

i would do the same,next time around,vary the spices & its as good as a completely different dish,sprinkle chopped herbs over the chicken the last few minutes it's in the oven.

I love 30 minute meals or shake and bake barbque glaze or shake and bake cajun,throw it in the oven ,throw rice in the nuke box and some frozen veggies in the steamer or order a pizza!

Pesto is the best "fast proper" food in the world! try chicken, yellow peppers, red onions, red pepper pesto, all quick stir fried. have in a wrap or with pasta. 10 minutes tops.
