Dr. King was saying that he hoped that one day, his children (and children everywhere) would be seen for more than their race. He was hoping that people would develop opinions about them based on the people they are (whether they are kind, friendly, mean...or whatever)... and NOT based on their race.

He was trying to get the point across that a person's character is SO much more important than skin color. It's very alliterative, too.
