Egg yolks contain all of the fat from an egg, including fat-soluble vitamins and potassium. Also, it contains a good amount of protein (but not as much as the albumin, the egg white). It contains lecithin which is an emulsifier (allows water-based and oil-based ingredients to blend).

One large egg contains 70 calories, 6 grams of protein, 5 grams of fat, (of which only 1.6 grams are saturated), and at least 14 vitamins and minerals. Most of the nutrients and 45% of the protein are in the yolk. The white contains mostly protein.

Egg yolks are the embyro of the chicken. Basically the baby chick in the early stage of development. its body is mostly protein based. but because it is in its fetal stage. that is why strict vegans do not eat eggs.
