Years ago, how did they find out you had to use Rennet to make cheese?

Nobody really knows as it predates recorded history but this is a story that came from wikipedia

A common tale about the discovery of cheese tells of an Arab nomad carrying milk across the desert in a container made from an animal's stomach, only to discover the milk had been separated into curd and whey by the rennet from the stomach.

It is funnier still to me that somebody actually had the idea to squeeze the bits hanging under a cow and drink what came out.

I don't know a lot about cheese, but I thought that Rennet was basically just a coloring. (???)

I bet the first cheese was an accident and probably looked like cottage cheese. I wonder who had the guts to actually try it.
