You may be trying to fry too many at once. To get the crispy restaurant style you can do two things.
1)Deep fry them (many restaurants do).
2) Fry them in small batches with sufficient oil. The hashbrowns should just cover the bottom of the pan. Tedious if making for a crowd, but neccessary!

Cook them in a skillet with E.V.O.O. Oil should be at a level of half the size of a hash-brown. A hashbrown is approximately 1/4 of an inch, so have about 1/8 thickness oil level. Make sure oil is really hot
Cook until golden-brown in color.
Enjoy... :)

i use lots of olive oil and salt, cook over medium heat with a cover on until they are thawed, then remove cover and turn up the heat. the reson yours are turning to mush is because you stir too much- only turn once or twice the whole time

If you're frying them, the skillet and cooking oil must be hot.
If it isn't, they'll never crisp up.
Good luck!
