Ricotta doesn't really melt like, say, cheddar or jack. It's a matter of water content -- ricotta is high in water. It does get softer when it bakes, like in lasagne.

Yes, but be sure to add eggs to the filling and parmasan cheese. The eggs will serve as a binder so the cream cheese doesn't melt and spill out of the shells, and the parmasan will cover up the flavor more of the cream cheese, which has a stronger flavor than ricotta, and also, with parmasan, it will give that real Italian flavor to the dish. You can also sprinkly mozzarella on top of it all and that too will make it taste more like the original version.

I made Lasagna a couple months ago, and when I opened the Ricotta cheese container, (which was not expired) it was very sour... I didn't have the time to run out to the store again, and I had 4 packages of cream cheese (I was going to make a cheese cake for the weekend) and 2 package of goat cheese. In my desperation, I whipped up 4 extra large eggs, the 3- 8 oz packages of cream cheese, and 1 package of goat cheese, folded in some parmesan, parsley, and freshly grated whole milk mozzarella... and made the best lasagna ever! I had guests for dinner and they begged for the recipe. They were from the old country too. Yikes! I will never do that again. I think I got lucky! LOL!

Because of high water contain you cannot melt ricotta. You should use it as it is.
