my husband only really eats meat, potaotes and cheese...
I need real help finding things he'll like that are also heathly.

Instead of beef use venison.
Instead of frying chicken steam it.
Bulk out casseroles with root veg & mushrooms.

This won't be easy . . . but try to transition to chicken and fish by using similar seasonings and treatments that a red meat would use. Like bbq chicken (take off skin first). Introduce him to salads by making a salad with grilled steak on top (here are some good ones):

In other words, make it hearty and introduce him slowly, make the transition easy for him. If you show him a plate of cottage cheese and spinach, it's not going to work.

Fish, chicken and vegetables plus fruit.
Use smaller plates.
Have some healthy snack food always available.
Get him to do some of the cooking (you do the shopping).

just try baking the meat instead of frying add thing's like canned broth (they are fat free) to keep meat from drying out ( also make casseroles)
