Ipod Nano? I don't think you can.

If you set your updates to manual, then you can check which playlists you want to download. It will also allow you to download photos from your iphoto files.
Also, if you have a mac , you can click on help , and under itunes you will see "ipod help". Type in the search window and it will come up.
