2 cups leftover cooked white rice
3 cups milk (any kind)*
1/2 cup sugar
small pinch salt
1/2 cup raisins
1 teaspoon vanilla extract
1/2 teaspoon cinnamon, optional
pinch nutmeg, optional
Combine cooked rice, milk, sugar and salt in a medium saucepan. Bring to a boil, then lower the heat to a simmer and stir in the vanilla and raisins. Cook until just about all of the milk is absorbed (30-45 minutes, depending on how absorbent your rice is). Stir in cinnamon and/or nutmeg, if using.
Divide rice pudding into individual serving dishes serve warm or chilled.
Makes 4-6 servings.

I usually make it this way: i put 1-2 cups of Rice which is boiled in a blender and blend it slightly so that it forms smaller granules and NOT paste. on the other side take about 1 L of milk in a sauce pan and put it on flame. Bring it to a boil and then lower the flame to let it simmer till half of it is left and the milk starts to thicken. Add cardamom to milk as well. Now add rice and let it simmer while constamtly stirring soo that it doea'nt stick to the bottom of the pan. At the end add sugar according to ur taste. U can also add almonds in it. Serve hot or chilled :)

For each cup of rice add 1.5 cups of milk. Add sugar to taste, cinnamon, nutmeg, mace (or any combination thereof or pumpkin pie spice) and vanilla (about 1 tsp. for each cup of rice).
Heat over medium flame for about 10 mins. Stir to prevent scorching. Adjust sugar and spices to taste. A pinch of salt will bring out the sweetness by adding a subtle contrast.
You may add raisins, currants or dried berries (cranberries, cherries, etc.)

Try adding some milk (I use skim or soy milk), honey to sweeten to taste, and a handful of raisins or dried cranberries, which seem to work better than any other dried fruit. Put in a pan and cook on low for a little while to cook ingredients together. You can also add a handful of oatmeal if you want to add some extra bulk and fiber.

Use 1/2 the amount of water called for. If the recipe calls for milk then use that amount of canned evaporated milk. If you have sweetened condensed milk use that amount but cut back on sugar by 1/3.
