1/2 cup vegetable oil 4 potatoes, thinly sliced 1 white onion, chopped 4 eggs, scrambled in a large bowl 1/4 teaspoon salt 2 to 3 tablespoons extra-virgin olive oil In a large skillet over medium-high heat, add the vegetable oil until the pan is filled halfway. Once the oil is hot, add the potato slices and onion, making sure they are well-covered by the oil; add more oil if necessary. Cook for 20 minutes until the potatoes and onions are soft. Drain the oil and combine the potato mixture with the eggs. Add the salt and mix well. In a 10-inch by 2 1/2 inch deep nonstick skillet, add the olive oil and heat over medium-high heat. Pour in the potato, egg, and onion mixture. Lower the heat to medium-low and cook for 4 to 5 minutes, until the bottom of the omelet is very light brown. Using a flat ceramic plate, cover the frying pan and flip the omelet over onto the plate. Immediately slip the uncooked side back into the pan. Cook for another 4 to 5 minutes, until the other side is a very light brown. Remove the omelet from the pan to a plate and cut into 4 wedges. This recipe was provided by professional chefs and has been scaled down from a bulk recipe provided by a restaurant. The Food Network Kitchens chefs have not tested this recipe, in the proportions indicated, and therefore, we cannot make any representation as to the results.

Spanish Omelet:
Traditionally served Hot, can be eaten cold, it's a matter of personal preference.
To prepare:
Use a small non stick pan/omelet pan
In a bowl beat 3 eggs
add salt, pepper and sliced green onions(optional)
You also need shredded cheese and salsa
Spray pan or use melted butter
heat pan to med high
pour eggs into pan, and let cook til they start to solidify, move the eggs gently, (not aggressively as with a scramble),
press eggs into a round shape, flip/turn over.
Sprinkle cheese, turn temp to low add Salsa.
Turn out onto the plate folded over or manually fold it over.
Bon Appetite.

Traditional Spanish Omelette

To serve as tapas by cutting into squares. Very simple ingredients but very tasty. Serves 6. Enjoy -

oil (for frying)
5 large potatoes
1 large brown onion
1 green pepper
salt and pepper
5 (60 g) eggs
2 cloves garlic

Wash and peel potatoes, cut into quarters and slice thinly.
Place in a large bowl.
Slice the onion and cut pepper into thick slices and add to the potatoes.
Add some salt to taste and mix.
Heat oil in a deep pan and fry the potato, onion and pepper together until potatoes are soft.
Remove and drain on paper towel.
Set aside.
Beat eggs in another bowl and add the potato mixture.
Add a salt to taste and pepper, finely chopped garlic and mix in.
Mixture should appear as though it is just coating the potato. If mixture is too dry, add another egg.
On a medium heat, in a non-stick pan, spray with a little oil and add the mixture.
Cook the mixture until egg looks cooked on bottom-- enough to be able flip over onto a plate and then sliding the mixture back into the pan to cook the other side. Do not overcook egg as it will then become dry. This is a recipe that needs practice until it is just right.
Serve while hot with a salad and crusty bread or cut into 2 inch squares for appetisers.

Can also be served cold.

If you mean proper spanish omelette (tortilla) then yes you can eat cold. The spanish also use it as a filling on a baguette etc. for a proper tortilla you need some cooked leftover pototes and some veg, peas, tomatoes or whatever takes your fancy. Heat the oil in a deep frying pan, fry off the veggies & then add the egg mixture with a liitle salt & pepper added. dont cook too fast & put a lid on the pan to cook it through thoroughly

hot or cold. depending on how many people you are making it for .you add more Potatoes more Onions and more eggs , Peal your potatoes & onions, whipe your eggs best get all your things ready before you start, again depending for how many people size of frying pan , slice your potatoes thin , just a bit bigger than the size of crisps once the fat is hot add your potatoes and salt let them fry a little then add your onions , keep turning till you see the potatoes becoming crispy, and that the potatoes are sticking to your slicer best use a plastic one , then try the potatoes to make sure they are cooked , turn up the gas a little, add most of the eggs, then with a plate a bit smaller than the pan lay it on top of the omelet and turn it over then slide the omelet back in again

I can assure you, that the best spanish omelette you can eat, usually is served at room temperature. That is beyond tepid. It's very difficult to eat a hot omelette, because as it is prepare as a spanish "tapa" (Hors d'Oeuvre), the plate usually rest on a bar or on a table. At this temperature, ingredients are relaxed and very well distributed all around. You will notice the difference, if for example you put a piece of an omelette in the fridge for 30 minutes and compare with a piece or a portion at room temperature. Try for yourself and comment. Good appetite !!!!!

It is supposed to be eaten cold!

Basically it is a deep pan omelet.

Diced cooked potatoes, fried onion, salt pepper and peas cooked in an omelet mix until solid and allowed to cool.

Yes, you can. You chop up some onions, green and red peppers, crack 2 or 3 eggs in bowl, add a dash of water, beat quite well, pour over vegetables in pan, gently stir, trying not to break eggs apart, until mostly set (cooked), Shred some Monterey Jack over top and fold over. Serve hot or cold. :)
