Pour boiling water over the dried beans. Let them sit for 1 hour. Rinse well in a collinder, discard soaking liquid. Put beans in pot, cover with water to 1" above the beans. Simmer until tender (approximately 1 hour depending on the beans.) Do not season or add salt during this time. Your beans will be gas free. Enjoy!

A quick boil will get rid of 42.5% of the gas. Boil the water, add beans and cook 1 minutes, then soak for one hour and cook as normal. It has a negative effect on the texture of the beans, but this is considered the best approach. Other wise for 28% reduction of gas, just soak over night, rinse, then cook.

Soaking the beans brings helps remove the bad ones. The only way to not get gas is stop eating them.

I preboil my beans in baking soda water. Bring them to a boil with 1/4 cup baking soda. Boil for 2 min. Turn off the heat let cool. Rinse and cook as normal. It really helps.

from being a chef and having years experience... the gas comes from the digestion of the proteins in beans... however, if you add some vinegar, just plain white wine vinegar, maybe a couple tbsp to about one regular bag's worth of beans, it will help out a bit.

the gas is made from indigestible parts of the bean, soaking will have no effect other than re-hydrating and cleaning.
