Peanut Butter Cookies

1/2 cup shortening
1/4 cup butter, room temperature
1/2 cup peanut butter
1/2 teaspoon salt
1/2 cup sifted powdered sugar
1 teaspoon vanilla extract
2 1/4 cups sifted all-purpose flour
3/4 cup salted peanuts, finely chopped
sifted powdered sugar

Cream shortening, butter, peanut butter, and salt until light and fluffy. Gradually beat in 1/2 cup confectioners' sugar. Blend in vanilla. Stir in flour and chopped peanuts, blending well.

Shape dough into small balls. On ungreased baking sheets, bake for 12 minutes or until golden brown at 375 degrees. Roll hot cookies immediately in sifted confectioners' sugar, let cool, then roll in more sifted confectioners' sugar.

My cookie recipe has no eggs in it and they are delicious.
you need:
1 tin sweetened condensed milk
3 cups self raising (all purpose) flour
1/4 cup sugar
1/4 cup butter
1 packet nestle choc chips
Preheat your oven to a moderate heat (180oC)
Melt the butter in a big bowl in your microwave (1 minute).
Stir in the flour, sugar and condensed milk.
Add the choc chips last (or else they melt all through it)
Roll in balls, press on cookie tray. Bake for about 8 minutes or until sides of cookies are the lightest brown. Take out and cool.
YUM YUM YUM - crunchie on the outside - chewy in the middle.
