hello again.

I want to put egg in my fried rice. I'm new at this. The last few times I just cooked the egg separately... mixed it up first with a little water, then spread it out in a frying pan and didn't touch it while it cooked... then shreaded it by hand and put it in the rice.

any other ideas? how do you do it? if you put the raw egg directly in the rice while cooking the fried rice part (rice already cooked), how do you keep the egg in little pieces and NOT just coating the rice? when do you put the egg in the frying rice step if at all? how do you stir it? should I wait a few minutes first? thanks very much.

I always wondered how the egg addition happened, as nothing I tried got it anywhere near what you buy as a dish.

Then I caught a PBS program called Simply Ming - chef: Ming Tsai

He quick fries egg in oil, breaking it up a bit as it thickens.
He doesn't cook it to complete done -- he removes it while still moist-- almost under cooked.
He then "reserves" it -- puts in in a plate
Re-uses same pan to fry the rice, adding shrimp, chicken, any veggies you want and soy sauce to taste/color.
As this warms/fries -- just before done, he adds the "reserved" egg and mixes it in -- works great.

btw: Your "question number 2" implies a question 1 -- didn't see it -- but just in case => the rice used is pre-cooked rice (day(s) old rice). So essentially fried rice is partially a left-over dish.

Don't know if you'll like it, but I like to mix in fresh diced scallions to the mixture just as I take the fried rice off the stove-top.

There are a couple of different methods that I like to use. First, I cook the egg in the pan that I am going to fry the rice in, then I don't dirty more than one pan! But, I just scramble it, plain, without water. Remove the egg, cook the rice the way you want and add the egg at the end mixing it all together.
The other way, like when I'm having company or want to make it more special, I cook the egg like an omelet. Let it cook in the pan, do not disturb it, when it is cooked, slide it onto the cutting board and make into strips. Add into rice at the end of cooking it (or just lay the strips over the beautiful mound of rice, and top with green onion tops making it pretty.

move the rice off to the side after it's cooked a bit, then scramble your egg and mix it right into the rice.
