Pineapple Upside-Down Cake
"This recipe was given to me by a good friend in Hawaii. She always uses fresh pineapple, the end product is delicious. Very yummy served with ice cream or whipped cream as an accompaniment."
Original recipe yield: 1 - 9 inch round cakes
INGREDIENTS
1/2 cup unsalted butter, melted
2/3 cup packed brown sugar
3 cups fresh pineapple - peeled, cored and cut into 1 inch chunks
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
2/3 cup white sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup milk
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a small bowl stir together the melted butter and the brown sugar; spread the mixture evenly in a well buttered 9 inch round cake pan. Pat the pineapple very dry between several sheets of paper towel, and arrange it evenly on top of the sugar mixture.
Sift together flour, baking powder, salt, and cinnamon.
In a large mixing bowl, cream the softened butter with the sugar until the mixture is light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Add the flour mixture in three parts alternately with the milk, beginning and ending with the flour mixture. Beat well after each addition. Spread the batter evenly into the prepared pan.
Place the cake in the middle of the oven. Bake for 45 to 55 minutes, or until a tester comes out clean. Let the cake cool in the pan on a rack for 15 minutes. Run a thin knife around the edge, and invert the cake onto a plate. Serve the cake warm or at room temperature.

Well, it's not much of a recipe, but it's easy and delicious and it's how I make it: I mix up a yellow cake using a cake mix. I really like the Butter Recipe from Duncan Hines but any yellow cake mix is fine. In the bottom of the cake pan, I dump in the crushed pineapples, 1/4 cup brown sugar, and half a stick of melted butter. If you like pineapple, which we do, I also throw in a handful of it, too. Dot the whole thing with your maraschino cherries, pour in the cake batter and bake it as the directions state. I've found that I usually have to bake it an extra 5 minutes or so. * 1/2 cup brown sugar
* 1/4 cup shortening
* 1 teaspoon vanilla
* 1/2 cup granulated sugar
* 1 egg, beaten
* 1 1/2 cups cake flour
* 1/4 teaspoon salt
* 2 1/2 teaspoons baking powder
* 1/3 cup milk
Melt butter in an 8-inch square cake pan. Add brown sugar; blend with the butter. Arrange 5 or 6 pineapple slices over the bottom of the pan, cutting as needed to fit as many as possible. In a mixing bowl, cream shortening, vanilla, and granulated sugar. Add egg; beat thoroughly. Add sifted dry ingredients alternately with the milk. Pour batter over pineapple. Bake at 350° for 35 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

IMO, pineapple upside down cakes taste even better when cooked in a cast iron skillet (in the oven)... really carmelizes the sugars and pineapple!
There are a few recipes here for making it in a cast iron skillet, if you want to see if the baking times and temps, or anything else would be different, from using an aluminum cake pan:

This one is quick and oh so yummy.....
1 pkg yellow cake mix
1/2 stick of butter
1 can of pineapple rings (in heavy syrup)
1 cup light brown sugar
cherry opt.
Pre heat oven 350. Mix cake as stated on box. On low heat melt butter and pour in a 13x9 pan. Sprinkle brown sugar on top, then place pineapple rings neatly in rows in pan. Place cherry in middle of pineapples, if using. Then pour cake batter into pan. Bake for 40-50 min or until lightly brown. then turn cake upside down on cake sheet.
Enjoy!

what i like to do is get either lemon or pineapple cake mix and substitute the water asked for in the recipe with pineapple juice from the pineapple rings in a can. brown brown sugar in butter, then add the rings, with pecans and cherries then pour the batter on top...cook per the directions and enjoy....

PINEAPPLE UPSIDE-DOWN CAKE:
1/2 cup margarine (1 stick) melted
1 cup brown sugar
1/2 cup walnuts (chopped)
1 can pineapple slices (reserve syrup)
1 jar maraschino cherries
1 cup sugar
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
3 eggs
1/4 cup pineapple syrup
1 teaspoon vanilla
Place the butter, brown sugar and walnuts in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch. Place pineapples in the sugar mixture. Put cherries in the center of each pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge). In a bowl, combine sugar, flour, baking powder, salt and set aside. In separate bowl, beat eggs until fluffy. Combine eggs, pineapple syrup, vanilla and
dry ingredients; mix until smooth. Pour batter into the pan being careful not to disturb the pineapples and cherries. Bake at 350 degrees for 35-45 minutes. Remove from oven and allow to stand for a few minutes to set and loosen the edges with a butter knife. Turn it upside down onto a serving dish.
Serve while still warm.
