When I wash them under the faucet, they are too soggy..

I can wipe down the top sides, But how do you clean the underside?

If they're not REALLY dirty, then just wipe them with a damp cloth (this would apply to pretty much any sort of mushroom).

What I do (when necessary) is put the mushrooms into the kitchen sink, with the caps facing UP (that's important). And DO NOT remove the stems...the stems prevent too much water from getting into the gills. Use that hose-sprayer thingy on your sink, and blast them with cold water. The mushrooms won't aborb much water, because it drains away before it has a chance to soak into them. Let them air-dry for a little while, then prepare them as usual.

don't wash mushrooms at all. wipe with a paper towel brushing off the visible dirt or if that isn't good enough for you or the skin appears old and dry you actually can peel them .use a small knife,or just your fingers starting at the edge next to the spores pinch and lift .continue around until finished.

damp cloth wipe off gently, never want to soak mushrooms they will become "rubbery" .
