Probably for the same reason you can't use them in lots of places. They're annoying and distracting to everyone else.

Because cell phones are a HUGE distraction and causes disruptions during the immigration and baggage processing areas. Same reason why you can't use it in hospitals, airplanes, etc. It has nothing to do with interfering with other eletrical equipment. Just distracting and annoys other people.

Aside from being annoying, distracting, disruptive, and often disrespectful, cellphones are often use to remotely detonate bombs.
